Ingredients

  • 1 cup of fresh lemon juice (about 4 lemons)
  • 2 tbs of fresh ginger, grated or thinly sliced
  • 4 cups of water
  • 4 tbs of maple syrup (or honey if not vegan)
  • Optional: fresh mint leaves for garnish
  • Optional: ice cubes to serve

Instructions

  1. In a small pot, bring 1 cup of water to a gentle boil.
  2. Add the ginger and simmer for 10 minutes.
  3. Remove from heat and let it cool slightly.
  4. In a large pitcher, combine lemon juice, remaining 3 cups of water, and maple syrup.
