One day, after testing a few plant-based versions of French toast, I decided to try it in my Instant Pot — and wow! It turned out perfectly soft, custardy inside, with just the right amount of sweetness. Since then, it’s become our family weekend favorite. Best part? It’s vegan, gluten-free, and absolutely divine. French toast is a timeless classic, but this vegan & gluten-free twist makes it accessible to everyone — and the Instant Pot makes it foolproof! Popular in American and European breakfasts, this version blends tradition with modern cooking, and it’s made with simple pantry staples. It’s also perfect for brunches, meal prep, or special occasions when you want to impress with something easy yet indulgent.

  1. Grease a round baking dish or small cake pan that fits inside your Instant Pot. Set aside.

  2. Cut the bread into cubes and place into the dish.

  3. In a mixing bowl, whisk together almond milk, mashed banana, maple syrup, flaxseed, vanilla, cinnamon, and salt. Let sit for 5 minutes to allow the flaxseed to thicken.

  4. Pour the mixture over the bread and press down gently to soak evenly.

  5. Cover the dish with foil. Add 1 cup of water to your Instant Pot and place the trivet inside.

  6. Set the dish on the trivet. Lock the lid and cook on Manual High Pressure for 25 minutes.

  7. Let the pressure release naturally for 10 minutes, then quick release.

  8. Carefully remove the dish, uncover, and let cool for 5 minutes.

  9. Top with your favorite toppings and serve warm!
