This single-serving print version is perfect for when you need a quick, satisfying meal without any leftovers. It comes together in about 20 minutes, making it an ideal weeknight dinner or a flavorful lunch.
Ingredients
- 4 oz (115g) flat rice noodles
- 1 tablespoon gochujang (Korean chili paste)
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon rice vinegar
- 1/2 teaspoon brown sugar (or honey)
- 1/4 cup protein of choice (sliced chicken, tofu, or shrimp)
- 1/4 cup shredded vegetables (carrots, cabbage, bell pepper)
- 1 large egg
- 2 scallions, sliced
- 1 teaspoon sesame seeds, for garnish
- 1 tablespoon cooking oil
Instructions
- Cook the Noodles: Cook the rice noodles according to package directions until al dente. Drain, rinse with cold water, and set aside. Toss with a drizzle of sesame oil to prevent sticking.
- Make the Sauce: In a small bowl, whisk together the gochujang, soy sauce, sesame oil, rice vinegar, and brown sugar until smooth.
- Cook the Protein: Heat 1/2 tablespoon of cooking oil in a large skillet or wok over medium-high heat. Add your chosen protein and cook until golden and cooked through. Remove from the skillet and set aside.
- Sauté Vegetables: Add the remaining oil to the skillet. Add the shredded vegetables and cook for 2-3 minutes until slightly softened but still crisp.
- Scramble the Egg: Push the vegetables to the side of the skillet. Crack the egg into the empty space and scramble until fully cooked. Mix it in with the vegetables.
- Combine Everything: Add the cooked noodles, cooked protein, and the prepared sauce to the skillet. Toss everything together for 1-2 minutes until the noodles are well coated and heated through.
- Serve: Garnish with sliced scallions and sesame seeds. Enjoy immediately while hot.
Tips
- Noodles: Don't overcook the rice noodles. They will cook further in the pan when tossed with the hot ingredients.
- Customize: Add a squeeze of lime juice or a sprinkle of red pepper flakes for extra brightness and heat. Kimchi makes an excellent addition!
- Storage: This recipe is best enjoyed fresh, but any leftovers can be stored in an airtight container in the refrigerator for up to 1 day.
