Grilled Peach Burrata Salad with Balsamic Glaze
This grilled peach burrata salad is a perfect summer dish, combining the smoky sweetness of grilled peaches with the creamy richness of burrata cheese, finished with a tangy balsamic glaze. Ready in under 20 minutes, it makes an elegant appetizer or light lunch.
Ingredients
- 2 ripe peaches, halved and pitted
- 4 oz (115g) burrata cheese
- 2 cups fresh arugula or mixed greens
- Fresh basil leaves
- Balsamic glaze (reduced balsamic vinegar)
- Extra virgin olive oil
- Salt and freshly ground black pepper
- Optional: prosciutto or toasted nuts for crunch
Instructions
- Preheat a grill or grill pan over medium-high heat. Lightly oil the peaches and place cut-side down. Grill for 2–3 minutes until grill marks appear, then remove.
- Arrange the arugula on a serving plate. Tear the burrata and place over the greens.
- Place the grilled peach halves on top. Add fresh basil leaves.
- Drizzle with balsamic glaze and olive oil. Season with salt and pepper. Serve immediately.
Tip: For best results, use ripe but firm peaches so they hold up on the grill. If you don’t have store-bought balsamic glaze, simmer ½ cup balsamic vinegar with 2 tablespoons honey until reduced by half, then let cool.
