Charred Corn Salad

This vibrant charred corn salad brings together sweet grilled corn, crisp vegetables, and a zesty lime dressing. It's the perfect side dish for summer cookouts, picnics, or a light lunch. Ready in under 30 minutes.

Ingredients

  • 4 ears of corn, husked
  • 1 red bell pepper, diced
  • 1 small red onion, finely chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1/2 cup fresh cilantro, chopped
  • 3 tablespoons olive oil
  • Juice of 2 limes
  • Salt and black pepper to taste
  • 1/4 cup crumbled feta cheese (optional)

Instructions

  1. Preheat a grill or grill pan over medium-high heat. Grill the corn, turning occasionally, until charred on all sides, about 8-10 minutes. Let cool slightly.
  2. Using a sharp knife, cut the kernels off the cobs into a large bowl.
  3. Add the bell pepper, red onion, jalapeño (if using), and cilantro to the bowl.
  4. In a small bowl, whisk together olive oil, lime juice, salt, and pepper. Pour over the salad and toss gently to combine.
  5. Sprinkle with feta cheese if desired. Serve at room temperature or chilled.
