Charred Corn Salad
This vibrant charred corn salad brings together sweet grilled corn, crisp vegetables, and a zesty lime dressing. It's the perfect side dish for summer cookouts, picnics, or a light lunch. Ready in under 30 minutes.
Ingredients
- 4 ears of corn, husked
- 1 red bell pepper, diced
- 1 small red onion, finely chopped
- 1 jalapeño, seeded and minced (optional)
- 1/2 cup fresh cilantro, chopped
- 3 tablespoons olive oil
- Juice of 2 limes
- Salt and black pepper to taste
- 1/4 cup crumbled feta cheese (optional)
Instructions
- Preheat a grill or grill pan over medium-high heat. Grill the corn, turning occasionally, until charred on all sides, about 8-10 minutes. Let cool slightly.
- Using a sharp knife, cut the kernels off the cobs into a large bowl.
- Add the bell pepper, red onion, jalapeño (if using), and cilantro to the bowl.
- In a small bowl, whisk together olive oil, lime juice, salt, and pepper. Pour over the salad and toss gently to combine.
- Sprinkle with feta cheese if desired. Serve at room temperature or chilled.
