1 block (7–8 oz) of feta cheese
2 pints (about 3 cups) of cherry or grape tomatoes
3 cloves of garlic, minced
¼ cup of extra virgin olive oil
½ teaspoon of salt
½ teaspoon of black pepper
½ teaspoon of red pepper flakes (optional)
10 oz of pasta (short pasta like penne, rigatoni, or fusilli works best)
½ cup of reserved pasta water
1 cup of fresh baby spinach or chopped basil (optional)
Freshly grated Parmesan, for serving (optional)
Instructions

Preheat your oven to 400°F (200°C).

In a baking dish, add cherry tomatoes, garlic, and olive oil. Season with salt, pepper, and red pepper flakes (if using). Toss to coat. Place the feta block in the center, surrounded by tomatoes. Drizzle a little oil over the cheese.

Bake uncovered for 30–35 minutes, until tomatoes burst and feta is golden and soft.

While the feta bakes, cook pasta in salted boiling water according to package instructions. Reserve ½ cup of pasta water, then drain.
